Baleadas Hondureñas
One of the most popular dishes in Honduras is a warm flour tortilla folded over a creamy filling of refried beans and cheese. This famous dish, called a Baleada, can be eaten anywhere at any time, from breakfast and lunch to snacks and dinner. The beauty of this recipe is that it is adaptable to the ingredients you have on hand. Ingredients

small yellow onion, quartered
1 can

sour cream
½ cup
heavy cream
¼ tsp.

Directions
Step 1
Heat oil in medium skillet over medium-high heat. Add onion and cook, flipping occasionally, until onion is lightly browned and oil absorbs flavor from onion, about 5-7 minutes; discard onion, retaining oil in pan.
Step 2
Add refried beans to skillet with oil. Cook, stirring often, until oil is absorbed and beans are heated through, about 3 minutes; remove beans from heat and keep warm.
Step 3
In medium bowl, stir together sour cream, heavy cream and salt; set aside.
Step 4
To assemble, spread refried beans onto warm tortillas; drizzle with sour cream mixture, sprinkle with cheese and top with desired garnishes. Serve immediately.
