Let’s toast to good company and good times with this delicious and new Coconut and Fruit Mojito. In this fruity version of the classic mojito, we muddle the mint, along with lime juice, sugar and 4 types of berries: blueberries, blackberries, strawberries and raspberries. Then, we add rum, club soda and the refreshing flavor of GOYA® Coconut Water to ice-filed glasses and we’re done. Prepare this fantastic mojito and enjoy it any time.

Ingredients

1 cup

fresh blueberries, divided

¼ cup

fresh blackberries

¼ cup

sliced fresh strawberries

¼ cup

fresh raspberries

½ cup

loosely packed fresh mint leaves

½ cup

granulated sugar

Ice cubes

2 cups

club soda

1 cup

white rum

lime slices

mint sprigs

cocktail skewers

Step 1

Thread 3/4 cup blueberries onto cocktail skewers; set aside.

Step 2

Divide remaining blueberries, blackberries, strawberries and raspberries among 8 tall glasses. Top evenly with mint leaves, lime juice and sugar; muddle until berries and mint are crushed.

Step 3

Fill glasses with ice. Top with coconut water, club soda and rum.

Step 4

Garnish each serving with berry skewer, lime slice and mint sprig. Serve immediately.

Tip: If fresh berries are not in season, use fresh-frozen GOYA® Berry Blend.
