Fiesta Rice and Shrimp Salad

Add some protein-rich and low-calorie ingredients to our classic Goya Fiesta Rice Mix. Adding sautéed fresh shrimp, Goya Pimientos and Goya Spanish Olives makes this side dish taste as good as it is good for you.

Ingredients

1 bottle (8 oz.) clam juice

1 cup water

1/3 cup plus 2 tbsp. Goya Olive Oil

1 package (8 oz.) Goya Fiesta, Mexican or Primavera Rice Mix

1 lb. large shrimp, peeled and deveined

1/2 cup finely diced red onion

1/2 cup diced Goya Fancy Pimientos

8 Goya Manzanilla Spanish Olives Stuffed with Minced Pimientos, sliced

2 tbsp. minced fresh cilantro

1/2 cup vinaigrette salad dressing

Salt and pepper to taste

Lettuce leaves or assorted greens

Directions

1. In saucepan, bring first 3 ingredients to boil. Stir in rice mix, and cook according to package directions. Let cool.
2. While rice is cooking, in separate saucepan bring 2 qts. Water to boil. Stir in shrimp, return to boil, remove from heat, cover and let sit 5 min. Drain and cool.
3. Combine onions, pimientos, olives, cilantro and dressing in bowl. Stir in cooled rice and shrimp. Salt and pepper to taste. Serve at room temperature over greens.
